I hate the drive through Evanston, so even though it may be slightly shorter we seldom go that way. We normally go up through West Yellowstone and back down through Jackson (I live in the Salt Lake area), and most of the time we end up coming back through Logan Canyon which is more scenic in my opinion.

You'd go up I-15 to the Brigham City exit, through Sardine Canyon to Logan, and then up Logan Canyon to Bear Lake (which is highway 89). Continue on 89 until you get to Jackson.
