DNC is sending all of their employees home and closing everything. If the shutdown averts, the Mammoth store will re-open but the other two won't (Upper General & Canyon Adventure). The 4 employees who're remaining at the Mammoth store are still being paid.
Xanterra is not charging its employees room and board while they're not working. If they are working (i.e., maintenance, RCs, EDR crew, etc.), then they'll still be charged R&B.
