Although I completely agree a walk to the top of Washburn is spectacular, but for a mountain hike that's shorter by a third, Bunsen Peak is the one. There are no restrooms at the top, but plenty of rocks to picnic on while taking in the scenery in all directions: on a clear day, incredible views.
If you are interested in hiking, educate yourselves on bear safety, get bear spray (buy a can for $45 or rent one for I believe about $8 a day at the kiosk next to the Canyon Visitor Center) and know you may encounter other wildlife, such as bison, on the trails, and understand how to avoid problems with them, e.g., with bison, go the long way around!
