Gardiner, West Yellowstone, Cooke City, and Silver Gate hotels appear full on the web? They're probably holding blocks for tours. Call, and keep checking the web and keep calling as there may be cancellations.

A beautiful option within 35 miles of Gardiner/North Entrance is Chico Hot Springs Resort. It's a delightful place, some of their lodging options are more economical than others but they're all fun. It's a bit of a commute, but a nice one in the absence of anything closer.

Chico's restaurant is excellent, but it can be very busy if there's a group event or a holiday or whatever, so when you book your room, ask if you can reserve a dinner table too. Depending on how long you're staying, probably one dinner there is enough, you may want to eat in the park or in Gardiner the other nights so you can extend your time in the park to the max.

Another option with great potential is to get a condo through VRBO. I just stayed in West Yellowstone in a quite nice one, granted winter is not high season like July is, but it was extremely cost-effective shared with a couple of friends, breakfast in the condo and lunch made to take into the park added to the thriftiness. Go to VRBO.com and check out all the gateways to see what's available.

I would NOT recommend Flagg Ranch (south of south entrance), otherwise you're practically commuting from the Tetons back and forth every day.
